Baked Chayotes / Chayotes al horno

Ingredients
5  Chayotes
1/2 Cup grated mozzarella cheese
50 gr. butter
1 Cup sour cream
100 gr.  chopped ham
1/2 Cup bread crumbs (also it can be gluten-free)
Salt and pepper to taste

Method

Chayotes are cooked in salted water. Then peel and dice. Smeared with butter an ovenproof dish. Get it layered chayote, spreading over the cream, cheese, ham, chunks of butter, salt and pepper. The last layer sprinkle with bread crumbs and a little butter. The dish is placed in the oven at 250 degrees Celsius until gratin perfectly. Serve hot.

Note: You can use gluten-free breadcrumbs for a healthier option.

Ingredientes
5 Chayotes
1/2 taza de queso mozzarella rayado
50 gr. Mantequilla
1 taza de crema
100 gr. Jamon picado
1/2 taza de pan molido
Sal y pimienta al gusto

Metodo

Se cuecen los chayotes en agua con sal. Luego se pelan y se cortan en cuadritos. Se unta con mantequilla una fuente refractaria. Se ponen en ella capas de chayotes, esparciendo encima la crema, el queso, el jamon, trozos de mantequilla, sal y pimienta. La ultima capa de espolvorea con el pan molido y un poco mas de mantequilla. Se mete la fuente en el horno, a 250 grados celcius, hasta que se gratine perfectamente. Se sirve caliente.

Nota: Se puede usar pan molido libre de gluten para realizar una opcion mas sana.

Avocado and Tomatillo Salsa

Ingredients

6 Green tomatillos, husked and rinsed
3 fresh serrano chiles or jalapenos
1 small garlic cloves
Salt and pepper to taste
1/2 cup of finely chopped white onion
1 Small, ripe Mexican hass Avocado
1/2 cup of chopped fresh cilantro

Method

Combine the tomatillos and chiles in a small pot and add enough water to cover. Bring water to boil over medium-high heat and cook, stirring occasionally, until tomatillos are khaki color and soft to the core, about 5 minutes. Gently drain and discard the water.

Combine tomatillos, chiles, garlic, salt and pepper in a blender. Pour the mixture into a serving bowl, let cool lightly then stir in the onion, chunks of the avocado and cilantro. Check flavour, if need it add more salt.1.

Ingredientes

6 tomatillos verdes, pelados y lavados
3 chiles serranos frescos o jalapeños
1 dientes de ajo pequeños
Sal y pimienta al gusto
1/2 taza de cebolla blanca finamente picada
1 Pequeño, aguacate maduro hass mexicano
1/2 taza de cilantro fresco picado

Método

Combinar los tomatillos y los chiles en una olla pequeña y agregar suficiente agua para cubrirlos. Lleve el agua a hervir a fuego medio-alto y cocine, revolviendo ocasionalmente, hasta que los tomatillos son de color caqui y suave al núcleo, a unos 5 minutos. Drenar suavemente y deseche el agua.

Combine los tomatillos, chiles, ajo, sal y pimienta en una licuadora. Vierta la mezcla en un tazón, dejar enfriar ligeramente luego añada la cebolla, trozos de aguacate y cilantro. Compruebe sabor, si lo necesitan agregar más sal.1

Jasper Chilli Cook-off 2014

themexchef.chilliI got the great opportunity to participated in the local chilli cook-off in Jasper, Alberta this year, I did not win anything, but still was really fun to be there, around all this local people enjoying different kinds of chillies. From hot to very sweet chillies and one burned. Lol

themexchef.cookingMy chilli was sponsor by the hotel company where right now I am working Sawridge Inn and Conference Center Jasper, I decided to cook something traditional from the South of USA, Rattle Snake and Beef Chilli.

Also I have the help of two beautiful ladies, Caly Tayanes and Sandi Verrier. This girls where so helpful, not just cooking, also taking care to explain and offer my chilli, also they took care of preparing our stand with the topic of Duck Dynasty them.

Me dieron la gran oportunidad de participar en el evento Chili cook-off en Jasper, Alberta este año, no gané nada, pero aún así fue muy divertido estar allí, todo este evento, lleno de gente local disfrutando de diferentes tipos de chilis. Desde picantes chilis, unos muy dulces y uno por ahi que quemaron. Lol

chilli.cook.offMi chile fue patrocinado por la empresa hotelera, donde en este momento estoy trabajando Sawridge Inn and Conference Center Jasper, me decidí a cocinar algo tradicional del sur de EE.UU. Chilli  de Vivora de Cascabel y Res.
También tuve la ayuda de dos hermosas damas, Caly Tayanes y Sandi Verrier. Estas senoritas que fueron de mucha ayuda, no sólo para cocinar, también el cuidado de explicar y ofrecer mi chili, y por supuesto que también se encargaron de la preparación de nuestro stand con el tema de Duck Dynasty.

Una noche tan hermosa y donde encontre a muchos de mis amigos y colegas culinarios, como mi amigo el chef George Grant del Hotel Chateau Jasper.

Por supuesto el año que viene voy a ganar algo, tengo nuevas ideas para mi chili. Saludos

Today I want to share with you a beautiful experience that happened at Jasper, Alberta. The night of the 8 of March, Saturday night I have the wonderful experience to be in a sophisticate masquerade ball, with many people and characters, from out of the ordinary with a 5 course dinner, cook by the Chef’s of the Fairmont Jasper Park Lodge.themexchef.family

The main purpose of this event was to obtain money for the charity program from the Rotary Club Jasper and also celebrate the 50th Anniversary of the Marmot Basin. Such a wonderful night I spend with my family and friends. The dinner was good as I expected, I am going to share the menu with you:
